Development of a method for making dried vegetables

The Rural Development Administration (Director Cho Jae-ho) evaluated the functional ingredients and physiological activity of Deodeok Soon (Children’s Leaf) to increase the utilization of Deodeok and create a new source of income for Deodeok growers, and developed a method of producing dried vegetables.

Deodeok is one of the major wild vegetables consumed in Korea. As of 2019, production is 13,000 tons, and the main production areas are Gangwon-do and Jeju-do.

The roots, stems, and leaves of deodeok can all be used as food ingredients, and especially the roots are made of raw vegetables, grilled, and pickled vegetables, which are eaten a lot.

Deodeoksoon is collected around May to June and eaten as raw vegetables, and can be dried and tasted as vegetables throughout the year.

The researchers analyzed the changes in efficacy and functional components according to the length of the two-year-old Deodeoksoon grown in the open field.

As a result, the total polyphenol, a representative component showing antioxidant effects, was the highest at 719 mg/100g when the pure length was 15-20 cm, and the total flavonoid was the highest at 398 mg/100g when it was 10-15 cm.

It was confirmed that the smaller the order size, the higher the index (DPPH and ABTS radical scavenging ability) showing the antioxidant effect.

In addition, Deodeoksoon contains 34mg/100g of vitamin C, which has antioxidant effects, similar to the typical spring greens, Naengi (24), Durup (23), Bomdong (23), and rape leaves (44).

The beta-carotene content of Deodeoksoon is 5,924ug/100g, similar to carrots (5,516), sweet potato leaves (5,698), red pepper leaves (6,694), and spinach (7,051), which are known to contain a large amount of beta-carotene.

Deodeok pure extract (5.0 mg/mL) had a skin whitening effect by inhibiting about 54% to 59% of tyrosinase activity, an enzyme involved in skin melanin biosynthesis. The effect of inhibiting the activity of elastase enzyme, which reduces skin elasticity, was also shown to be about 38 to 46%.

It has also established a method of producing dried vegetables so that deodeok shoots that are only produced in spring can be consumed throughout the year.

It was found that Deodeoksoon was boiled for 1 minute and then quickly hot air dried at 80°C was excellent in terms of antioxidant effects.

The results of the study were published in a paper in the Korean Journal of Food and Nutrition Science, and the method of manufacturing dried deodeoksun has completed a patent application.

Kim Young, head of the functional food department at the Rural Development Administration, said, “We will continue to conduct research with the Gangwon-do Agricultural Research and Extension Services to establish Deodeoksun’s fields and hydroponic cultivation conditions and to develop functional materials.”
